Reuben Casserole

Ingredients

  • 16 oz can of sauerkraut
  • 12 oz can of corned beef
  • 2 cups shredded swiss cheese
  • 1/2 cup mayo
  • 1/4 cup 1000 Island Dressing
  • 2 medium sliced tomatoes
  • 2 tbs melted butter
  • 1 cup pumpernickel bread crumbs

Directions

  1. Place sauerkraut in a 1 1/2 quart casserole
  2. Add layer of corned beef, then swiss cheese
  3. Combine mayo and dressing, then spread over cheese and top with tomato slices
  4. Melt butter and mix with bread crumbs, then sprinkle over tomatoes
  5. Microwave for 12-14 minutes, then let cool for 5 minutes
