Crispy Potato Quiche

Ingredients

  • 24 oz package of hash browns, thawed
  • 1/3 cup melted butter
  • 2 cups shredded cheese (any kind)
  • 1 cup diced ham
  • 1/2 to 3/4 cup half and half
  • 3 eggs
  • salt/pepper to taste
  • optional: mushrooms, broccoli, onion or other vegetables

Directions

  1. Press thawed hash browns between paper towels to remove moisture
  2. Put hash browns into greased 10 inch pie plate to form a crust
  3. Brush with butter and bake at 425°F for 25 minutes
  4. Remove from oven and sprinkle with 1/2 cup cheese, all of the ham, and any additional toppings on top of the crust
  5. In a bowl beat half and half, and eggs together, then pour over ham and cheese
  6. Top with remaining cheese and then bake uncovered for 30-40 minutes at 350°F
