Molded Cucumber Salad

Ingredients

  • 2 medium cucumbers
  • 1 3 oz package lime jello
  • 1 tsp beef flavored bouillon
  • 1 cup boiling water
  • 1 cup sour cream
  • 1/2 tsp dry mustard
  • 1/8 tsp dill weed
  • 3 tbs tarragon vinegar

Directions

  1. Cut cucumbers in half lengthwise, scoop out seeds, then coarsely shred and drain
  2. Combine jello and bouillon in a large bowl
  3. Add water and stir until gelatin is dissolved
  4. In small bowl, combine sour cream, mustard, dill, and vinegar
  5. Stir until smooth
  6. Add sour cream mixture and cucumbers to gelatin mixture and stir until well blended
  7. Pour into oiled 1 quart mold and refrigerate for at least 6 hours
