Makes 4 1/2 dozen cookies
Ingredients
- 2 cups (4 sticks) margarine, softened
- 1 cup sugar
- 2 cups all-purpose flour
- 3 cups quaker oats
- 1 tbs grated lemon peel
- 1 tsp vanilla
- Powdered sugar
Directions
- Beat margarine and sugar until creamy
- Add remaining ingredients, except powdered sugar, and mix well
- Cover and chill for 30 minutes
- Heat oven to 350F, shape dough into 1 inch balls and place on an ungreased cookie sheet
- Flatten each cookie with bottom of glass that has been dipped in powdered sugar
- Bake for 12-15 minutes or until edges are a light golden brown
- Cool completely and sprinkle with powdered sugar if desired
