Lemon oat Lacies

Makes 4 1/2 dozen cookies

Ingredients

  • 2 cups (4 sticks) margarine, softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 3 cups quaker oats
  • 1 tbs grated lemon peel
  • 1 tsp vanilla
  • Powdered sugar

Directions

  1. Beat margarine and sugar until creamy
  2. Add remaining ingredients, except powdered sugar, and mix well
  3. Cover and chill for 30 minutes
  4. Heat oven to 350F, shape dough into 1 inch balls and place on an ungreased cookie sheet
  5. Flatten each cookie with bottom of glass that has been dipped in powdered sugar
  6. Bake for 12-15 minutes or until edges are a light golden brown
  7. Cool completely and sprinkle with powdered sugar if desired
