Carrot Cake with Cream Cheese Icing

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1 1/2 vegetable oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped nuts
  • 1 tsp vanilla

Directions

  1. Beat sugar, margarine, eggs and vanilla until smooth
  2. Add 1 cup morsels, melted; mix well
  3. Mix together sugar, flour, soda, salt and cinnamon
  4. Stir in oil
  5. Add eggs one at a time mixing well after each egg
  6. Add carrots, nuts, vanilla
  7. Mix thoroughly
  8. Pour into floured and greased 13 x 9 x 2 inch cake pan
  9. Bake at 350°F for 30 minutes
  10. Cool in pan
  11. Spread with cream cheese icing
