Ingredients
- 2 cups sugar
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 3 tsp cinnamon
- 1 1/2 vegetable oil
- 4 eggs
- 3 cups grated carrots
- 1 cup chopped nuts
- 1 tsp vanilla
Directions
- Beat sugar, margarine, eggs and vanilla until smooth
- Add 1 cup morsels, melted; mix well
- Mix together sugar, flour, soda, salt and cinnamon
- Stir in oil
- Add eggs one at a time mixing well after each egg
- Add carrots, nuts, vanilla
- Mix thoroughly
- Pour into floured and greased 13 x 9 x 2 inch cake pan
- Bake at 350°F for 30 minutes
- Cool in pan
- Spread with cream cheese icing
